Okonomiyaki 🥞🥢
🇯🇵 These are a Japanese street food and I believe popular in Osaka where I was supposed to visit last year (ðŸ˜) they are like a cross between frittata and savoury pancakes.
They are SO damn good and actually contain some pretty nutritious ingredients 🥬 I’ve made a meat free version but you can really add what you like to them.
Method 🥣
- Grab a large mixing bowl and add the shredded cabbage, spring onions, panko, salt and mix through the eggs carefully.
- Heat a nonstick pan over medium heat. Use kitchen paper to distribute oil around the pan evenly and so that you don’t create too much oil in the pan.
- Use a 1/2 size measuring cup for 3 people, 1 cup size for 2 people or a 1/4 cup size if you’d like lots of small ones or you can use a ramekin to scoop the cabbage mixture into the pan. Pack it full and press down firmly and then add to the pan. Cook for 2/ 3 mins each side, keep the heat medium/ low.
- Clean the pan with kitchen roll in between and then repeat with the remaining mixture.
- Mix the Okonomiyaki sauce ingredients together in a bowl and add to the pancake along with Mayo, sesame seeds, pickled ginger, and any other toppings of choice.
